Ray’s Ketogenic Diet Cloud Bread

Ingredients

2 Tbls soft Philly cream cheese
1/4 tsp creme of tartar

Starting out, preheat your oven to 350 degrees. Line a baking sheet with parchment paper or I use the non-stick aluminum foil.

You want to separate the yokes from the whites.

Beat egg whites and cream of tartar together in a bowl until stiff peaks form.

Mix the egg yolks and the soft cream cheese together in a separate bowl using a wooden spoon and then I use my hand-held mixer til the mixture is really smooth and has no visible cream cheese.

Gently fold the egg whites into cream cheese mixture, taking care not to deflate the egg whites.

Carefully scoop mixture onto the prepared baking sheet, forming 5 to 6 “buns”. I use a 1/2 cup measuring spoon to do this.

Bake for 30 minutes until it is lightly browned.
